Steak Oscar anyone

Ok so I woke up this morning and turned on the TV and Pioneer Woman was on making a dinner for her dad steak Oscar, it looked so good I went to the store and got everything for Steak Oscar for dinner.  What transpired during the Iron bowl, which Alabama lost was a wonderful dinner.  Below is what Kim and I put together.




 About 3 months ago I bought 20Lbs of shrimp from a friend who went to lower Alabama and bought 100Lbs of shrimp.  I boiled about 2lbs then peeled and prep. For sautéing  in butter, slap your MAMA, fresh garlic, White pepper, cayenne pepper and good chili powder form Korea.



Kim getting ready to make some twice baked cauliflower which taste like twice baked potatoes but better for you.  Once again showing off the copper core Allclad pots and pans thanks Mom and Dad for the Christmas money one year you got the ball rolling.

It has been a long time since I made hollandaise sauce and yes I forgot how temperamental it can but during the process.  First batch down the drain, thanks for the sassy sidekick for cleaning up my mess so I could start again.  Different approach ended in success.





 Sassy sidekick is doing her thing with the cauliflower adding  cream cheese to the cooked cauliflower, then sour cream, green onions, topped with sharp cheddar, and bacon.  Back in the oven for baking.

 now BBQ for 130 degree center temp.

 we almost forgot the wild rice thanks Sassy for the reminder

Final product and I can tell you first hand it melted in my mouth.  Always remember not to forget to try what you see on the cooking shows the payoff is always worth it and you know it does not matter if you see it on TV or some other media it is you that creates it by cooking it.  If you want to come over for Steak Oscar I would love to cook it for you just let me know.  You might have to throw down for the meat LOL.

Walker Wings and Shrimp Boil with Friends

We have met some fun nice people since we have moved to Alabama.  They have always been so kind to us and have included us in a lot of functions, which we have had a great time at.  So we wanted to invite them over for Wings and a shrimp boil.  Wings I know but Shrimp boil was a first, so that part they were the testing board :) 


First thing is the last thing eaten yes dessert, Kim’s Kahlua cake, think it was a hit because a few of the ladies wanted the recipe.  She did a great job only problem is I have to eat it all week, that does not help my middle part of my body  


 Wings can get a little hot on the lips so a good broccoli slaw helps cool things down


Kim  never gives herself credit for being creative.  But I know she is and our table setting shows it

Ok just so you know I did use my secret recipe and you thought you were getting it, but I don't think so  just a little tease

Oh yes the finished meal and yes I did over cook for eight but if you know me as Kim always says if it is worth doing it is worth over doing.  great night with friends we ate we laughed we drank sitting around a fire pit doesn't getting any better than this

Christmas Eve none traditional Clam Chowder



Yes I know it has been a while, I guess between moving and all the grandchildren life gets crazy.  My Sassy sidekick wishes I would cook all the time LOL but then we would both weigh XXX.  I wanted to throw out some ideas about not cooking traditionally.  I just made clam chowder and yes it is not traditional Boston clam chowder but boy does it taste good.  Just think if everyone cooked what has already been discovered we would have no knew recipes.  Ok, it goes like this, Sassy says she wants clam chowder, so I make some for our Christmas Eve meal.  Since Sassy doesn’t do well with milk I decided to do my own thing with almond milk.  This Clam Chowder does have some tradition, like clams, potatoes, and celery but I think it stops right there.  Take a look, it came out great, at least my Sassy sidekick thinks so .  Creativity comes from your heart, so share your heart this year in cooking.
Go ahead and break some traditional rules, who knows what deliciousness
 you will discover.

time to add the clams lots of clams I like a meaty soup.  ever have clam chowder and you were the lucky guy that found the one clam





ok I know I said almond milk but I have not found any replacement for Heavy whipping cream any ideas?




Ok the sausage made it a little yellow because of the spice it had in it but that is ok you could garnish well and hid the yellow if you were afraid your friends would not like it LOL but doesn't change the flavor.




ok here is the Almond breeze worked well and it doesn't separate like milk if it gets to hot

I know it is always a risk but risks are worth it when they are good and when they are bad just another chance to try again for perfection.  but don't be like me my sassy sidekick hates the fact that I do not write down the recipes as I go hard to repeat that way
